Easter Bird's Nest Cupcakes
No fuss, classic Easter nest cupcakes!
I made these cupcakes for Easter last year and they turned out so cute! All you need is some shredded coconut and candy eggs. There are all sorts of candy eggs you can buy at the store this time of year: reese's, cadburry, whopper, jelly beans, whatever your heart desires!! I started with coconut cupcakes and chocolate cupcakes, topped them with a dollop of chocolate frosting, sprinkled with toasted coconut and then placed Cadburry Mini Eggs on top! No fuss! Not to mention they tasted coco-wonderful!! Cadburry Mini Eggs don't last stand a chance near me... As in, they don't last long when I'm around. They are definitely my favorite Easter candy! You will need:
1 dozen cupcakes
chocolate frosting, 3-4 cups
shredded coconut, 2 cups
Candy Eggs, I used Cadburry Mini Eggs
Toast the coconut by spreading it evenly on a parchment covered baking sheet. Bake at 300 degrees for about 20 minutes, checking and stirring it around on the sheet every 5 minutes. Remove once it reaches your desired toasty goodness.
Frost the cupcakes with a heap of chocolate frosting, and pat the cooled coconut shreds on to create a nest. Top with candy eggs and enjoy!
