Avocado Cilantro Deviled Eggs
Creamy avocado filled deviled eggs with cilantro and lime.
If you're looking to take your deviled egg game up a notch, it's time to add some avocado to the mix. Literally.
Avocado, cilantro, and fresh lime juice turns deviled eggs into something closer to guacamole-filled eggs. Who doesn't love the sound of that?
People will be pleasantly surprised when you bring these to your next BBQ. Time to change things up!
Start by boiling one dozen eggs. I like to add a few extra, in case I mess any up while de-shelling them. (I needed them).
After they have cooked and cooled, take the shells off.
Slice them in half long ways.
Put the yolks in the bowl of a food processor. Or a plain old bowl.
Blend up the yolks.
Mix in avocados.
Mix in cilantro and lime juice!
Don't forget the seasoning.
Fill the eggs up, and garnish with some left over cilantro!
Avocado Cilantro Deviled Eggs:
1 dozen eggs
2 ripe avocados
1 lime
handful of cilantro
1 tea. salt
1/2 tea. paprika
1/4 tea. pepper
1/2 tea. garlic powder
Directions:
Hard boil the eggs. Remove the shells. Slice the eggs in half length-wise.
Remove and blend up yolks. Blend in sliced avocado. Then blend in cilantro.
Juice the lime and put the lime juice in the mixture, along with spices.
Spoon or pipe filling into egg whites and enjoy!
