For Valentine's Day, Paul and I are going to Capitola. It's become our Valentine's tradition since we've been dating. This will be our 4th year going there. We go to the same restaurant every year. And we order the same thing every year. And no, surprisingly, we aren't grandparents.
Since we really loved it our first year, we decided to make it a tradition. While we do other fun/different things throughout the year, it's nice to have our own special little tradition to go back to each year.
I know there are a lot of V-Day haters out there, and people who think it's just a hallmark holiday, which, I agree...but it doesn't mean we can't have fun with the holiday as an excuse to be cheesy and whatnot! So we like to get into it.
While I love our tradition, a fun date night away and an excuse to get dressed up, I do like the idea of making dinner for each other and staying in. Especially since I've got this cupcake recipe to work with..

I've definitely been lacking in the cupcake department on my blog. It's not that I haven't made tons of cupcakes, I just am very picky about my cupcakes. And if I'm going to be sharing them with you all, I want to be absolutely sure they're absolutely delicious.

Not only are these cupcakes chocolaty, moist, and fluffy; the recipe bakes up just 2 cupcakes! Because most of the time we don't need 24 cupcakes. These are perfect for cravings that need quick relief, aaand for Valentine's Day, which just so happens to be this weekend. Cooking a romantic dinner for 2? You'll probably need a dessert for two as well. (or for one!) I'm totally looking out for you.

I had extra frosting left over because I don't like a lot of frosting on my cupcakes.
So if you prefer a big heap of it, the recipe still makes enough for frosting lovers like yourself.

Chocolate Cupcakes for 2
A simple recipe that makes just 2 delicious chocolate cupcakes.
Yield: 2 cupcakes
Ingredients
- 3 T. flour
- 2 T. sugar
- 1 T. cocoa powder
- 1/4 tea. baking soda
- pinch of salt
- 1 1/2 T. vegetable oil
- 1 T. milk
- 1/4 tea. vanilla extract
- 1-2 T. very hot water
Cooking Directions
- Preheat oven to 350 and line a muffin tin with 2 cupcake wrappers.
- Mix together flour, sugar, cocoa powder, baking soda, and salt.
- Add vegetable oil, milk, vanilla, 1 T. of very hot water, and mix.
- If batter is thick, add in another tablespoon of hot water, and mix.
- Divide batter evenly between the two cupcake wrappers.
- Bake at 350 F for 14-16 minutes.
Chocolate Frosting for 2
Just enough frosting to generously frost 2 cupcakes.
Ingredients
- 2 T. softened butter
- 2 tea. cocoa powder
- 5-6 T. powdered sugar
- 1 tea. heavy cream
- tiny pinch of salt
Cooking Directions
- Mix butter and cocoa powder together.
- Slowly mix in powdered sugar 1 T. at a time.
- Mix in salt.
- Add heavy cream and stir.
- If needed, add more powdered sugar to thicken, or more heavy cream to thin.
- Frost on cooled cupcakes.
