Red Velvet White Chocolate Chip Cookies

Ingredients
  • 1 cup butter, room temperature
  • 1 1/2 cups sugar
  • 1 egg, room temperature
  • 1/2 tea. vanilla extract
  • 2 tea. distilled white vinegar
  • 2 1/2 cups all-purpose flour
  • 3 T. cocoa powder
  • 1 1/2 tea. baking soda
  • 1/2 tea. salt
  • 1 1/2 cups white chocolate chips
Instructions
1. Preheat oven to 325° F. Line a cookie sheet with parchment paper or a silpat. In the bowl of a stand mixer, cream together butter and sugar for 5 minutes on high, until light and fluffy.2. Mix in egg, vanilla, and vinegar. Stop the mixer, scrape down the sides, and mix some more to ensure everything is mixed together.3. With the mixer on low, slowly add all the dry ingredients. Once all dry ingredients are incorporated, add the white chocolate chip to the cookie dough.4. Roll balls of dough about 2 tablespoons-full, 6 cookies to a sheet, and bake at 325° for about 20 minutes. Take the cookies out when the centers still look undone, and let them continue to bake and cool on the cookie sheet for 15 minutes before removing.
