Blueberry Cobbler
I love how simple cobblers are. An minimalist fruit filling, topped with a simple biscuit topping. I don't think you can go wrong with cobbler. Plus, there are tons of ways to switch it up! Nothing beats the warm and gooey filling with a light biscuit topping, paired with some ice cream. Summer is just asking for some!
This blueberry cobbler is sweet and delicious. The filling has lemon juice to kick it up a notch. The topping is light and brown sugary. So easy to make, you have no excuse not to! The perfect addition to your upcoming summer BBQ!
And go!
The biggest blueberries around!
Fresh lemon juice because we're fancy.
Berries are drizzled in lemon juice.
Sprinkled in sugar. Lots of sprinkling..
Can we just eat them like this?
A bit of flour to thicken it up...
Spread in the pan to await the topping..
Flour, salt, and baking powder is combined...
Butter is cut into the flour mixture.
Until you get this!
Sugars are added...
Then the egg
And then the whipping cream, and vanilla!
aaand FOLD! Until you get something thick and chunky like this. Chunky is good. Chunky means butter chunks- means yummy.. Understand?
Batter is spread atop the berries, and sprinkled with sugar for added sparkle!
Baked to perfection.
MMMMMMMMMMMMMM!!!!

Whisk an egg in a small container and then add egg, whipping cream and vanilla into flour/butter mixture. Fold until the liquid is fully incorporated, but DO NOT stir any more than necessary!
Spread batter atop the berries, and sprinkle with sugar.
Bake at 350 for 30-35 minutes or until golden brown.
Pair with some homemade vanilla bean ice cream and you're good to go!
