Neapolitan Sundae Cupcakes

Strawberry, chocolate, and vanilla layered cupcakes topped with whipped cream, chocolate ganache, sprinkles, and a cherry on top! These cupcakes are the perfect envelopment of an ice cream sundae wrapped up into a single cupcake. 

These cupcakes are the product of a hungry daydream at work. Normally you'd think that wouldn't end well, but this time I lucked out. It seems I dream up my most decadent, over the top recipes when I'm anywhere but the kitchen. 

While they look like they require a lot of work they're simple to put together. I made one vanilla cupcake base, and divided it into three bowls. I left one vanilla, added chocolate to the second, and strawberry puree to the third. Just like that you have 3 flavors! They are simply layered into cupcake liners and baked up. 

I love the messy wavy look of the layers. Mostly because I don't think I could have gotten even lines if I tried. 

I'm starting to notice a pattern of making something into something else. These are ice cream sundaes turned into cupcakes. I've made a banana split into an ice cream cake here, and even pb&j into ice cream sandwiches here! Oh and don't forget my Chai Tea Latte Popsicles..Something about summer, and ice cream makes me want to do weird things I guess. But I'm not complaining! :)

Neapolitan Sundae Cupcakes
Strawberry, chocolate, and vanilla layered cupcakes topped with whipped cream, chocolate ganache, sprinkles, and a cherry on top! These cupcakes are the perfect envelopment of an ice cream sundae wrapped up into a single cupcake.
Ingredients
  • 1/2 cup butter, room temperature
  • 1 cup sugar
  • 2 eggs, room temperature
  • 1 T. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tea. baking powder
  • 1/2 tea. salt
  • 3/4 cup milk
  • 3 T. strawberry puree
  • 2 T. cocoa powder
  • 1/4 tea. instant espresso (optional)
  • 2 cups whipped cream
  • 1/4 cup chocolate syrup or ganache
  • sprinkles
  • maraschino cherries
Instructions
Preheat oven to 350°F. Line a muffin tin with cupcake liners.Cream butter and sugar until light and fluffy.Mix in eggs one at a time, scraping the sides of the bowl after each addition.Mix in vanilla.Add flour, baking powder, salt, and stir gently to combine.Add milk and combine.Separate batter into 3 bowls. Set one aside as the vanilla cake.Mix in strawberry puree to the second bowl and set aside.Mix in cocoa powder and instant espresso powder to the last bowl. If it feels thick, mix in 1 T. of milk.Fill cupcake liners with batter, one color at a time, with about 1Tablespoon of each flavored batter each.Bake for 18-20 minutes, or until an inserted toothpick comes out with just a few crumbs. Let cool before topping with whipped cream, ganache, sprinkles and cherries.
