Zucchini Brownies (Vegan)
These brownies are rich, fudgy, and packed with zucchini. They also happen to be vegan. Before you run away screaming "ew", let me tell you how delicious they are!
I couldn't let zucchini season pass without sharing this recipe. I made these a while ago, and this post has just had to take a spot on the back burner behind some other more favorable (exciting) recipes. (See here and here). Yes I'm a little biased, but that's not to say these brownies aren't delish!
They are ultra fudgy, chocolate-y, and oh so good. You don't taste the zucchini, and you wouldn't guess they were vegan if you didn't know!
I asked a while back on Facebook what I should make with all the zucchini I had. So far I've done Zucchini Bread, and now I give you Zucchini Brownies.
Baking with zucchini is great because you can sneak a vegetable into your dessert, without feeling like you're eating a salad. The flavor is mellow enough that it hides in the background of the other flavors you are baking with. With zucchini bread there are spices, and zucchini brownies, there is CHOCOLATE. What more do you need?

- 1 cup flour
- 1/2 tea. salt
- 1 1/2 tea. baking powder
- 1/4 cup + 1 T. cocoa powder
- 1 cup sugar
- 1/2 cup brown sugar
- 2 cups shredded zucchini
- 1/2 cup vegetable oil (can sub coconut oil)
- 1 cup chocolate chips (optional)
