Roasted Balsamic Strawberry Ice Cream

Ice cream made with roasted balsamic strawberries for a sophisticated and tangy twist on strawberry ice cream.

THIS ICE CREAM. MAKE IT!

Last summer I made Roasted Balsamic Strawberries and was blown away. The balsamic vinegar with the strawberries is an unusual but totally meant to be pairing. It was amazing drizzled over vanilla bean ice cream, and I figured why not put it IN vanilla bean ice cream. Best idea ever.

This creamy ice cream starts off tangy from the balsamic vinegar and finishes of sweet with the taste of strawberries. It's creamy, dreamy, and delicious. It puts a nice little grown-up twist on the classic strawberry ice cream.

This time instead of roasting the strawberries in the oven, I did it on the stovetop and cooked it down into a nice thick syrup. The softened strawberries and all the delicious thick syrupy goodness go into the food processor and it gets pureed.

The puree is added to the vanilla bean ice cream base, and now you have a strawberry ice cream base!

It then gets refrigerated to cool and let the flavors develop.

Then into the ice cream maker it goes, and soon you are rewarded with the most amazing strawberry ice cream!

Roasted Balsamic Strawberry Ice Cream
Ice cream made with roasted balsamic strawberries for a sophisticated and tangy flavor.
Ingredients
  • 16 oz. strawberries
  • 3 T. white balsamic vinegar
  • 2 T. brown sugar
  • 1 vanilla bean
  • 2 cups heavy whipping cream
  • 1 cup milk
  • 1 cup sugar
Instructions
1. Wash, hull, and chop up strawberries. Place them in a medium saucepan. 2. Scrape the beans out of the vanilla bean, and add the pulp and the bean into the saucepan. 3. Add balsamic vinegar and brown sugar and heat the mixture on medium heat, stirring every few minutes. 4. Cook down the strawberries until they are soft, about 10 minutes. 5. Remove the vanilla bean, and add the strawberry mixture to the food processor and puree. Set aside. 6. In a saucepan, you can use the same one, combine heavy cream, milk, sugar, and the used vanilla bean. 7. Heat on medium low heat until the sugar has dissolved and the mixture is thick enough to coat the back of a spoon. Don't let it boil. 8. Once it has thickened and the sugar has dissolved, pour the strawberry mixture in and mix it all together. 9. Transfer the mixture into a large sealable container and refrigerate until cool, a few hours or overnight. 10. Once the mixture has cooled or sat overnight, remove the vanilla bean and discard it. Then pour it into your ice cream maker and make the ice cream according your your mixer's directions. 11. Freeze for a few hours until hardened and enjoy!
