Chocolate Chip Banana Bread
A good banana bread is a staple one should have in their baking repertoire. I find myself making banana bread often to avoid letting old bananas go to waste. Did you know you could freeze your over-ripe bananas to save for future banana bread making? Don’t let them go to waste! If I don’t plan on making banana bread with over-ripe bananas I will just peel them, slice them, (sometimes even mash them), and then freeze in a freezer-safe bag or container. Whenever you’re in the mood to make banana bread you’ve got them at the ready in the freezer! Just let them thaw before using them. If you're planning ahead, you can thaw them in the fridge overnight. Now, a fair word of warning, the bananas turn reallllly brown in the freezer, just a result of natural oxidation. They also thaw into mush. So don’t expect your frozen bananas to thaw into something pretty. Use them for smoothies or banana bread!
I have one banana bread recipe on my site before this one. My Brown Butter Banana Bread with Brown Butter Glaze. It’s deeeelish. But I wanted a more simple classic banana bread for the purists out there. This one is made with melted butter, so no mixer required. Leave the chocolate chips out for a stand-alone delicious banana bread. What types of add-in's do you put in your banana bread?
- 1/2 cup melted butter
- 3/4 cup sugar
- 2 large eggs
- 1 tea. vanilla
- 1 1/2 cups mashed over-ripe bananas (about 3-4)
- 2 cups all-purpose flour
- 1 tea. baking soda
- 1/2 tea. salt
- 1/2 tea. cinnamon
- 1/2 cup chocolate chips (I use semi-sweet or dark)
